Ingredients: 1 kg Mussels; 75 g Smoked streaky bacon; 1 Onion; 2 Garlic cloves; 1 small handful Tarragon; 1 tbsp Olive oil; 200 ml Dry cider; 1 tbsp Lemon juice; 50 ml Double cream; 3/4 tsp Dijon mustard; 1 handful Parsley

I love mussels, but let’s be honest the best bit is the delicious sauce you can dunk bread or fries into. This cider and bacon sauce is a real winner, I spent a long time and most of a loaf of bread cherishing the sauce after this shoot!
