Step 1
Add the tomatoes, garlic and chilli to a saucepan. Pour over the olive oil until just covering. Cook on a low heat for 40 minutes until the garlic is tender. You don’t want the oil to go much above 90c, it should be barely bubbling. Use a thermometer if you have one.
