Air Fried Peruvian Chicken and Green Sauce

This Peruvian chicken & green sauce instantly made it into my weekly dinner rotation. The chicken is rich in flavour with minimal effort and the green sauce adds so much freshness to any dish. If you can’t find the Aji Amarillo paste, (i got mine off Amazon), then you can blend half a red pepper with a mild chilli instead.

Method

Turn cooking mode on

Step 1

Add the chicken thighs to a bowl with the marinade ingredients. Mix well and marinade for 30 minutes to 24 hours. Save the marinade.

I think you meant 1 squeeze lemon? Also can I substitute or remove the mayonnaise from the sauce?

Thanks for catching that! So the mayo is really great, i was sceptical using it at first too. If you really don't like it, you could go for a thick greek yoghurt or a sour cream. Hope you enjoy!
