If you can’t find the Aji Amarillo paste, then you can blend half a red pepper with a mild chilli instead. For oven, do all the above but allow another 5-10 minutes per stage. Serve up the chicken with the green sauce over rice or whatever you fancy on the side.

I think you meant 1 squeeze lemon? Also can I substitute or remove the mayonnaise from the sauce?

Thanks for catching that! So the mayo is really great, i was sceptical using it at first too. If you really don't like it, you could go for a thick greek yoghurt or a sour cream. Hope you enjoy!
