Add the chicken thighs to a bowl with the coconut milk, curry paste, lime juice and marinade for at least 30 minutes. Add to a medium hot griddle pan and cook for 5-7 minutes per side or until cooked through. Alternatively air fry or oven cook at 190c for around 20 minutes until cooked through with some colour.
